Need healthy food ideas also doing a gluten free diet

I'm looking to get rid of 68 pounds and currently have some health issues and the doctor wants me to do a gluten free diet. I'm not big on veggies which I need to change if I wanna get rid of the 68 pounds. I do like corn, potateos, and broccoli if mixed with cheese. I need some other ideas as for veggies I can eat and etc. Please feel free to add me so I can find out what to do.

I was once considering a Gluten Free Diet to help in my health journey but I was advised by a nutritionist that unless you have an allergy to gluten that it is not a good idea because the body needs a certain amount of it. But in my journey down that road I found some great gluten free options. Whole Foods has great gluten free deserts and snacks. Also quinoa is amazing as is the gluten free oatmeal. I also have a nutribullet and I was able to find some great filling gluten free recipes that have fruit, veggies and oats in them. Its definitely not easy going gluten free but there are several options out there. I know foodie.com has a bunch of recipes.0

An actual medical doctor (MD went to med school) put you on a gluten free diet for certain health issues? I'd get a second opinion. I have celiac (good reason to be GF). Gluten free food has less fiber, more calories, less vitamins and more sugar than regular flour based foods. It will make dieting harder, more inconvenient, make eating out nearly impossible (even gluten free menu restaurants really aren't) and crazy expensive!
Go very light on the cheese sauce with the veggies or you'll have a heck of time maintaining a calorie deficit!0 -
I would just keep trying veggies in different ways - raw, cooked, sauteed, frozen vs. fresh, etc. And try it more than once! Maybe make a stir fry, or mix some into a bean chili... add some to a salsa... make a big salad and add fruit to it too (I love salad when it has fruit!).... Try roasting potatos with olive oil and seasonings and having a veggie with it (prepped the same way)... If you really need to use cheese, try to reduce how much you use as cheese is just making it taste like cheese! Also, you could try smoothies... Mixing fruit with some veggies in a blender and drinking them. Eat them raw and dip them in hummus. I far prefer the taste of fresh veggies to frozen, but in a pinch, just to get some into my diet I have some frozen packs of the ones that are made by green giant i think that come in an olive oil sauce (they have like an "antioxidant blend", etc.) and I think they're pretty good.0
