Im in the same boat. Always grilled chicken with steamed veggies. But sometimes I sautee them in garlic and EVOO and through in some random spices just to get things changed up and I sometimes just switch out meat like turkey burger or some sort of pork. And switch between brown rice, beans, and sweet potatos.

So ill be watching for recipes on here also!

Check out your local bookstore. The cooking section is usually full of recipes. :)

Yesterday I ate about 1600 calories--I ate hamburgers, a rootbeer float, and rotisserie chicken. There are so many reasonable ways to fill up that many calories while getting all your nutrients.

I like stuffing bell peppers with beans, rice, tomatoes, cheese. The weather is getting warmer but what about chili? A million different kinds to make, with lots of leftovers...

Baked/grilled chicken or fish or any other meat with steamed veggies, roasted veggies, sautéed veggies. Pastas, stir fries, soups, stews.. crock pot meals. I usually make 4-8 servings at once and store them in tupperware.

I love making Mexican Rice Bowls. Perfect for freezing for lunch at work too!

It works out to be $5.00 to make 8 - 1 1/2 cup servings. You can add protein if you choose, just adjust for it in the recipe builder.

  • I try to work with what is on sale. Usually, that is what is in season and at it's peak. I usually make lean protein and veggies for dinner. Lunches can very from pb and j to lean protein and salad. Like this week, salad with cottage cheese. Breakfast, this week anyway, is oatmeal and a boiled egg. It doesn't have to be hard, if you stock up on healthy stuff, you can always through something together that is quick and healthy.

Take the store sale flyer to Pinterest or yummly or epicurious and look up fabulous recipes that work with the store specials. This way you will always eat seasonally because those are the veg on sale and you wont blow excess money.

I have a thing for lentils right now.

My go to recipe is: 1 can of chopped tomato, tbs red pesto, 1/2-1 cup diced frozen vegetables, 1/4-1/2 cup lentils (I usually have precooked in the fridge so that it doesn't take so long), spices to taste.

Put in a pan, take to a boil then let it simmer for however long time you have.
