one of my favorite recipes
pork tenderloin n sp9inach -
remove all fat, place loin in glass pan with a dash of olive oil
smother it in slices of grapefruit, limes, and oragnes (don't squeeze). then squeeze fresh lemons onto it, and through in the rines.
As the meat starts to cook, due to the citric acid, powder the loin with ceyenne pepper,
bake at 375 until slightly pink in middle. Take out, let stand and finish cooking for about ten minutes.
Slice thin and put it on a bed of spinach, finish with vineggrette
