Banana nut protein mini muffins
12 Banana nut protein mini muffins: 1 Ripe banana , 3/4 cup Egg whites, 1/2 cup Unsweetened almond milk, 3/4 cup Oats, 2 scoops Vanilla protein powder (I use a raw non-gmo yellow pea protein from growing naturals), 5 Medjool dates pitted, 1 tsp Baking powder, 1 tsp Baking soda, 1 tsp Cinnamon, 1 tsp Pumpkin pie spice, 1 cup Crushed walnuts (stirred in later). Blend, stir in walnuts, bake in sprayed foil cups 20-25 mins at 350F. Made these today and loved them!
I blended everything but the walnuts in my nutribullet. A blender or food processor would work.
