coconut and quinoa flour

i made some protein bars in the morning and used coconut flour and quinoa flour, they were both organic and raw and i had a bar and after a while i felt a bit off, not a lot, just a bit so i was thinking it may have been the flours used
i know you should eat wheat flour raw due to some bacteria or traces of ecoli - something like that
just wanted to ask if you can eat coconut flour raw or not, thanks
oh, and another thing, i bought cacao nibs as i was hoping to melt them and drizzle over the bars but i was standing over the pan for 45 minutes and IT LOOKED EXACTLY THE SAME!!!
has anyone had any success with melting cacao nibs or are they just un-meltable and if there are any other substitutes for healthy chocolate
