Fresh veggies

I have a lot of texture issues with food, which limits my options quite a bit. I can't eat cooked veggies generally, as I instantly gag.

Right now I eat lots of raw cucumbers and carrots, but I want to expand my horizons a bit. What other veggies are good raw? Green beans? Peas?

    Might I suggest you check out some raw food websites. It is amazing how they can make almost any vegetable or fruit and turn it into an amazing gourmet meal. I have had raw pizza, tacos, burritos, nachos, burgers, cheesecake, etc. etc. They are amazingly delicious and extremely healthy. The only caveat is that a lot of recipes call for a lot of nuts for sauces and such, and they can make a dish rather high in fat.

    For me, I like cauliflower, carrots, tomato (I guess technically a fruit) and peppers raw. I can't stand raw broccoli, mushrooms, or onions but when they're cooked they take a 180 in taste it's the strangest thing lol.

    Celery, radishes, kohlrabi, turnips, cauliflower (and it tastes like whatever you want!--kidding), broccoli are all ones I like to eat raw lately. Raw peppers are good on a salad, as are, obviously, various types of greens. Those peas in a pod. I have never tried green beans raw, but if you cook them right they really should have a pretty similar texture--not overcooked or mushy.
