Hard to say in a way since different poses and styles and lighting but just to give an opinion

Well on the assumption that you can take some brutal honesty here is the thing.
To me it looks like whatever approach you took to weight loss or whatever you did to lose that much weight caused you to lose much of your muscle. If you were to actually just slap on another 30 pounds by simply eating above your maintenance level you would likely not look the same as you previously had 30 pounds heavier because at that weight you likely had more muscle than you do now.
What I am saying is I would avoid focusing on what "weight" would be appropriate for you. I'd shift to eating above your maintenance and I'd start with some weight training, whatever you can handle at the moment, without pushing yourself too hard.
To look fuller in your aesthetic while also being healthy (without becoming overweight in terms of fat) you are going to need to regain some of that lost muscle and that is going to take time and a lot of effort. I am not saying this to dissuade you but rather to try to encourage you with what I consider the realistic outlook, it will be tough.0 -

They told me not to count so I'm not sure if I should eat a lot more or just a little more. I saw the eatopia blog for 3000 calories so that kind of threw me off because I do not want to relapse lol0 -
