Pumpkin Pancakes

These are SOOOOOO good. I made them this morning for Halloween!

- 1/2 cup fiber one pancake mix
- 1/8 (half of 1/4) cup canned pumpkin
- 1/3 cup water
- 1 teaspoon cinnamon
- cooking spray

- Combine the pancake mix, pumpkin, and cinnamon together in a small bowl.
- Add water and mix.
- Coat the griddle (or a frying pan) with the cooking spray, then place over medium heat. Let the pan heat for 2 minutes.
- Pour pancake mix onto griddle to make 3 pancakes. When the edges harden and bubbles surface, turn the pancakes over until done.
- Serve with sugar-free syrup, and enjoy!

    I just made these! They were... INCREDIBLE. Only 4 ingredients? Awesome! A batch for one person? More awesome!

    I put a little peanut butter and honey on top, just delicious. I will definitely make these again. Completely satisfied what was looking to be an out of control craving. Thanks!!!
