Low Fat Whole Wheat Sour Dough Pancakes

Just posted this in the Recipe section. These are excellent. Used no-sugar applesauce for 3/4 of the oil and 1/2 the flour as whole wheat instead of white AP flour. Only 170 calories with sugar free syrup on 2 6 inch pancakes.

Whole Wheat Sourdough Hotcakes (Low-fat)

Sourdough Starter, room temp
1 cup Water
1/2 cup Whole Wheat Flour
1/2 cup All Purpose Unbleached Flour
1/2 packet Yeast (one package)
Pancakes:
2 Tbs sugar
1 Tbs oil
3 tbs apple sauce
1 egg
1/2 tsp salt
1 tsp Baking soda scant to :full teaspoon if starter is real sour

Sour Dough Starter

1. Mix together flours, water and yeast. Keep covered at room temperature for 24 hors. Feed sour 1 cup mixed flours and 1 cup water every day to feed sour until used for pancakes. Can store left over sour in refrigerator for up to 2 weeks between use. Feed starter after removing from refrigerator to restart.

Pancakes

1. Into the sourdough dump sugar, egg and oil. Mix well. (my note if you have time let it set for 15 to 30 minutes) Add soda last thing; when ready for batter to hit the griddle. Dilute soda in 1 tbsp. of warm water. Fold gently into sourdough. DO NOT BEAT.
