Larro's Squashchamacallit

I picked the first squash of the season out of my garden, and wanted to come up with a new recipe to use them in. What I came up with was the result of not having enough time to second guess myself. I had to cook, eat, shower and get to work, so I didn't stop just because it sounded crazy. And it does sound crazy. But it turned out pretty good. It has 143 calories per 1/2 cup. Ease back on the olive oil and sliced almonds, and that would drop.

3 cups sliced yellow squash
1 cup diced Vidalia onion
1 cup sliced carrots
1 cup sliced almonds
3/4 cup diced Jalapeno pepper
2 TBS olive oil
1/3 TBS lemon pepper seasoning

    Looks really good but is it really 3/4 cup jalapeno???? But looks really good..

    Yep, 3/4 cup. That was only 3 peppers. I thought about a full cup, but I was in a hurry. I have been in a Jalapeno mood lately.
