I have to post this recipe because it's SO delicious and so healthy.
Fry 1-2 small onions and 2 cloves of garlic in olive oil. Add 2 tsp of tomato paste and 1 tsp of curry powder. Mix and set aside.
Bring 4-5 cups of broth to a boil (add salt if desired), add 2 chicken breasts (cut in half) and boil for 12-15 minutes or until cooked throughout. Remove chicken breasts and shread chicken. Place back into broth. Bring to medium heat.
Add onion and garlic mixture to pot. Add 2 cups of diced tomatos, 2 cups of mixed veggies (peas, corn, carrot). Add 1 cup of black beans. Add 1 tsp ginger. Add 1/4 to 1/2 jalapeno if you like spicy foods. Top with avacado and pepper once bowled. VOILA! A hearty and healthy soup. Makes lots of left overs. ENJOY!!
