Help lighten zuchinni muffins!
I'm trying to creat a low calorie, lower fat zuchinni muffin. I tried 3 cups zuchinni, 1 cup ff Greek yogurt, 1.5 cups whole wheat flour, 1.5 cups oatmeal, 1 tsp baking soda and baking powder, stevia extract and 1/2 tsp salt, 2 eggs.
Texture is too dense, needs more sweetness, and it's too salty.
Next I will probably try using apple sauce instead of oil and maybe 1/4 cup sugar or Splenda instead of stevia.
I want it sweet but not too sweet. Full flour and sugar really amps up the calories but maybe I'm going to have to go that way. Even the lower fat, healthier versions of zuchinni muffins/bread are pretty high in calories.
I'd like to make a version that fills about 12 muffin tins.
Does anybody have a really slim zuchinni bread recipe?
If not, I guess I can just make more servings of more muffins instead.
