Favorite recipe for week nights?

Hi MFP friends, I'm stuck in a rut on what to fix for dinner that is healthy and tasty, I feel like I fix the same few over and over. What are your go-to recipes?

    Janes Genuine Scottish Fish Fillets and homemade sweet potatoe fries. (baked)

    Hi love the salsa chicken that has been on here. Chicken breasts, taco seasoning rubbed into the meat and any jar of salsa.. Throw in the crockpot. Cook on high 3 hours or until done. Shred and use several different ways .
    Add sour cream to it and put In tortillas
    Put over rice with black beans added plus a little cumin
    Base for a chicken tortilla soup in a hurry.
    Almost forgot.. Put in egg roll wrappers, spray with Pam and BAKE till crispy and dip in taco sauce mixed with lite sour cream.. My husbands favorite way...

    Hope this helps. I usually put this all in after dinner refrigerate ......so it's ready when we get home. Do a lot of that kind of cooking while watching tv. Takes no time..

    I always have beef and chicken taco meat in the fridge for quick easy meals during the week. You can use them as a base for many things.... obviously taco's, salads, cassaroles, etc.

    Turkey Kielbasa is a favorite of the kids. Either just steamed in a skillet with saurkraut or a variation of this recipe:

    I use cajun spice instead of old bay and red potatoes (and sub turkey kielbasa). This makes 6 servings in my house.

    And my version of the crockpot chicken noted earlier (chicken, 2 cans Rotel tomatoes, 1/2 paco taco seasoning, and can of black beans) - we make soft tacos, and then I have the leftovers over lettuce for a taco style salad.

    Spicy Lemon Chicken Thighs (adapted from : http://www.pigpigscorner.com/2009/05/spicy-tahini-baked-chicken.html)

    1 1/2 to 2 pounds boneless skinless chicken thighs
    1 large lemon
    4 oz Joseph's roasted red pepper hummus (1/2 small container)
    3 Tbsp brown sugar
    4 Tbsp water
    1 tsp dried thyme
    1/2 tsp red pepper flakes
    1/2 tsp ground black pepper
    3 cloves (1 1/2 tsp) minced garlic


    Directions:
    Add all ingredients to bowl and mix thoroughly. Spoon/pour over chicken thighs and let marinade. The longer the better - I like to mix this up in the morning so they have all day to soak. Bake at 400 F for 25-35 min (depending on size of thighs). Also good on the grill.

    I serve with Uncle Ben's Broccoli au Gratin rice and broccoli florets. YUM!


    Here's another good one. I don't bother with the ranch dressing or fancy mayo - just use the mayo or miracle whip we have on hand. I like Cape Cod (kettle style) Sea Salt and Vinegar chips. We serve with some white rice and a Ceasar salad.

    Salmon Patty's with fish seasoning and cheese on top (Or beef patties seasoned how you like them with cheese)

    SERVED WITH

    2x bags of steamed veggies + cheese sauce

    My cheese sauce:

    Bring half stick of butter + 1/4 cup heavy whipping cream to gentle just starting to simmer and add

    2OZ cheese (ANY KIND, I usually use Colby jack, but any will work)

    Add cheese and immediately turn off heat. Stir till you have a thick creamy sauce and mix in veggies

    Bowtie pasta, basil pesto, fresh squeezed lemon juice. I sometimes top it with shredded parmesan, cherry tomatoes, green onions. You could throw in some chicken strips for protein. It's simple, quick and delicious.
