I'm looking for some new entree salads for the summer time. I made the recipe below earlier this week and it was a big hit. The toasted almonds were amazing!

That recipe sounds delicious! Have you put it in the MFP database?

I don't really have any salad "recipes," but I like a mix of bok choy and red lettuce tossed with tomatoes and maybe some carrots (yeah, I cheat and get the packaged carrot sticks), topped with baked chicken and shredded cheddar cheese. I usually use some kind of vinaigrette with that.

OK I am going to show my ignorance to you.
K8mcminn would you please explain to me how Pinterest works & how I can get started with it?

    Thank you very much!!

I have been trying to get more fiber and like the Planter's Nut-rition Digestive Health Mix. Pistacchios, almonds, dried cranberries, and granola. I decided to make what I call a Digestive Health Salad:

    3 cups Dole Mixed Greens
2 Tbls. Kraft Crumbled Blue Cheese
    1/4 Cup Planter's Nut-rition Digestive Health Mix
    2 Tbls. Kraft Catalina Dressing

    1 serving. 333 Calories.

I also sometimes add Tyson Ready and Seasoned Fully Cooked Steak slices if I need more protein. 1 serving (1/2 bag) adds 140 calories, but makes the salad real hearty and a great meal! This is a really good protein and fiber meal.

I don't really have "recipes" either, as I tend to just add whatever sounds good at the time, but here are a few I've been really enjoying lately! All start with the lettuce/mixed greens of your choice.

    - roasted chicken breast, sliced strawberries, pecans (candied if you want to be ultra indulgent), green peppers and honey mustard dressing
    - grilled chicken, hard boiled egg, anchovies, cesar dressing
    - canned tuna, black beans, black and green olives, bell pepper, honey mustard or berry vinegarette
    - taco meat, bell peppers, black olives, black beans, cornflakes (seriously- makes for great crunch on taco salads!) salsa, sour cream if I have the cals
    - sliced steak, grilled green peppers with garlic, feta cheese, little bit of Ranch

In the US, where the OP resides, the term "entree" refers to the main course. And it's a freaking salad! Of course I'll have a huge portion!

Actually, entree in the US is the main course. Don't know about Canada, but in France, where the word originated, and much of Europe, entree is before the main course. More like what we would call an appetizer. Actually, in much of Europe, any salad would not be eaten until after the main course.

My dinner salads are a little boring lol but I love a big salad with lettuce, tomato, cucumber, chicken, and reduced fat feta cheese. I also make my own dressing by mixing a 5cal/tbsp balsamic vinegar and a 5cal/tbsp salsa. Makes a very yummy 10 calorie salad dressing and the whole salad is usually around 135 calories!

I make a chicken bacon ranch spinach salad that I really like.

4oz boneless skinless chicken breast sauteed in 1tblsp butter until fully cooked and browned
    1-2c fresh baby spinach
    2 strips bacon, cooked
    1oz shredded cheddar cheese
    2tblsp ranch dressing

Optional: Diced jalapeno and/or diced green onion

Cook the chicken, chop the bacon after cooking and add it to the spinach, put the chicken on top, quickly add the cheese so it melts a little, drizzle dressing.

Thanks so much everyone. I've been using the phone adpp and hadn't come back to this post. So many great ideas.

I made italiam bread salad last night it was supoer yummy. I served mine over mixed greens, evn though the recipe did not call for it. I also reduced the amount of bread to reduce calories. I toasted the bread in a pan misted with extra virign olive oil.

"A crusty rosemary bread works nicely for this classic Italian salad. The bread - pulled into bite-sized pieces - tomatoes, cucumbers and red onions, are tossed with fresh herbs and just enough vinegar and oil to give them a nice glistening. Four generous servings."
    Ingredients:
    1 clove garlic
1 (1 pound) loaf Italian bread
    1 cup chopped tomatoes
1 cup cucumber - peeled, seeded and
    chopped
1 cup chopped red onion 1 clove garlic, minced
    2 cups chopped fresh basil
    1/8 cup chopped fresh thyme
    1/4 cup olive oil
    2 tablespoons balsamic vinegar

    Directions:
    1. Rub a peeled clove of garlic around a wooden salad bowl.
    2. Pull apart or chop the bread into bite-size pieces.
    3. In the prepared salad bowl, combine the bread, tomatoes, cucumbers, red onions, garlic, basil and thyme. Add enough olive oil and vinegar to lightly coat, toss
