What to do if kale is bitter?

I have a whole bunch of kale in our shady garden, which decided to come up as volunteers. The only reason that I can figure that it keeps trying to grow each summer is that is when our irrigation is every other week. So, winter is probably too dry for it to get a start.
Anyway, it's been 110 but the kale looks wonderful. I believe it will be too bitter as a fresh salad so I'd like to boil, fix in a soup or add to a pot of black eye peas. I haven't touched it yet because of fear that it won't taste good because of the heat.
I'm not a huge fan of kale but I keep trying to like it. I may be one of those people that can't eat overly bitter foods.
Any suggestions to remove excess bitterness? I know it won't make it until winter and we don't a
Ways have frost anyway. Plus, we move in a month so I'd like to make use of all our fresh produce before we leave.
