Mix in some parmesan and parsley. Especially good if you cooked your quinoa in a broth rather than water.0

I usually use one part quinoa with one part protein and two parts vegetables. Broccoli and cauliflower go really well with quinoa's fluffy consistency. You can use it pretty much anywhere you'd use rice though.0

I mix it with taco seasoned ground beef, salsa, frozen corn and stuff peppers with it. So yummy!0

I add extra pumpkin seeds and craisins to this recipe and I like to use the mini dark chocolate chips 'cause they distribute better. I use that cookie dough scoop to portion them out. Some times I add oats too. Makes about 40 -50 cookies0 -

I use frozen edamame instead of peas to bump up the protein and I form them into many balls which i then mash to a chicken nugget shape and bake at 350 for about 30 min. I serve them with an artichoke Greek yogurt dip-really just tzaziki with artichokes instead of cucumbers. Each person gets 6 nuggets . These are hugely popular and they really do resemble chicken nuggets. I am way too lazy to slowly pan fry 8 burgers for 11 min apiece0 -

I actually recently discovered quinoa myself, and I am smitten! I think the great thing about it is you can use it in both sweet and savory dishes. I also love that there is a decent amount of protein in it, which makes it perfect for Meatless Mondays (or Meatless Fridays in my house
). For this evenings meal, I sautéed some cherry tomatoes and garlic in olive oil, and tossed those with the quinoa, along with some sliced black olives and plain Greek yogurt for creaminess and some more protein. It was quite tasty!

Good for breakfast too, better than oatmeal and you can add whatever you like to it.0

Thanks for the replies.
Some great ideas there. I'm definitely going to try the stuffed peppers, quiche, chickpea burgers and buffalo chicken bites.
Thanks again and keep them coming!

I like this salad which I ate at a cafe. Quinoa, cooked shelled edamame, cooked snow peas, sun dried tomatoes, cherry tomatoes and vinaigrette.0

These look awesome....thanks0 -
thanks for posting this because i was having major issues with quinoa. i tried to make it the way a friend told me---in chicken broth with some italian seasoning---none of my family members liked it and neither did i
so i will have to give some of these a try. i also found this site that I'm going to have to try some things off of. http://www.coffeeandquinoa.com (i know its not quinoa, but on that site the lady has a black bean chocolate cake with chocolate avocado icing--i must say, I'm intrigued
