My version - Cream of Broccoli Cauliflower Cheese Soup

Made this last night. It was quick, easy and 167 calories per serving!

1pkg McCormick Produce Partners Cream of Broccoli Soup Mix
1C Fat Free Reduced Sodium Chicken Broth
1C 1% Milk
1 TBS unsalted Butter (you could use a reduced fat margarine)
1 1/4C Frozen Broccoli Cauliflower blend, thawed
1/2 Velveeta Shreds Cheese

Combine the first 5 ingredients and bring to a simmer for 10 minutes. I then used my immersion blender to puree the broccoli and cauliflower. Make as smooth or chunky as you prefer. Stir in the cheese until melted.

  • Altough I didn't follow the directions on the packet, it said 3 servings. That would be a little over 1 cup, 167 cal. per serving the way I made it. I left the amount of liquid the same swapping 1 cup broth for 1 cup of the milk, decreased the butter, but added 1/4 C more of broccoli/cauliflower. My husband and I split it into 2 servings at 250.5 calories, a little over 1 1/2 C each.
