Easy recipe for cooking challenged

Meatballs in puttanesca sauce with spinach and quinoa
1 24oz jar of any puttanesca sauce (it will be in the spaghetti sauce section) Tip: if you hate olives choose a different tomato sauce!
1 bag 28oz frozen meatballs(I use Sutton and Dodge from SAMs club)
1 12oz bag cut leaf frozen spinach
2tbsp grated Parmesan cheese (the cheap bottled kind is ok-I used Great Value grated Parmesan)
Optional-2 Tsp of salt free Italian herbs like mrs dash.
Dump all ingredients in large pot with 12oz of water and simmer on med low about 20 min.
Meanwhile take 1 cup of rinsed quinoa (I put mine in a fine sieve and wash it under the tap for a minute- if it says it is pre washed rinse it anyway!! ) put in a sauce pan with 1 3/4cup of water and simmer on med low for 12 min then dump in the large pot. Stir. Cook for 5 more minutes and serve.
Each person gets 6 meatballs and half a cup of sauce
Serves 9.
