Foodies/Restaurant Owners-Off Topic

Most of my friends know that we are a vendor at our local farmers market. Currently we only sell produce plants, produce when it comes bountiful, fruit leather bites, bread crumbs, croutons, potato chips (we make the night before). This is our first time doing this.

We live in Buffalo New York..home of the chicken wing. We have a 30 year family recipe of a chicken wing sauce that is well accepted by close family and friends. It's a secret recipe, and well...I can't explain it but it has such flavor and heat and taste unique. It's no Frank's Hot Sauce. It's better.

Even though we are a vendor at the market, we can't sell it because we would have to make in a 20c kitchen. Our father makes this secret sauce (hence why we call it "Pops Sauce") right from his kitchen.

We would love to get the product out as I know this would be a big hit but never even sure where to begin. I'd like to have local eateries try it with their chicken wings but i have no idea how to even get started.

So any restaurant owners out there: What are your thoughts? Any of your customers approach you with serving/offering a recipe of theirs in your establishment?

    Why not ask other venders who sell jars of cooked sauces, soups, preserves etc. how they got started and then perhaps you can start by selling at market.
    ETA I love buying yummy homemade goods at our markets!
