Pumpkin and nut muffins
These muffins are moist and delisious
Ingredients:
3/4 cup of plain flour
1/2 cup of instant oats -uncooked
1 teaspoon of baking powder
1/2 cup of boiled pumpkin
3 tablespoons of sugar
1/2 cup of low fat milk
1 egg
2 tablespoons of low fat margarine
25g of trailmix ( mine had pumpkin seeds, raisins ,goji berries, sunflower seeds and peanuts)
1 tsp cinammon
1/2 tsp nutmeg
Directions
- Soak oats in milk
- Cream together margarine and sugar and then beat in the egg
- Add the soaked oats onto the margarine mixture
- Add ,pumpkin ,spices and trailmix
- Sift flour and baking powder together and then add to the wet mixture
- Fold together and pour onto prepared muffin pan
- Bake at 180 degrees for 20 min or untill done.
