Shrimp Fajitas! YUMMY!!
1 bag pre-cooked shrimp frozen (You can cook your own if you like, I find this easier though!)
2 Tbs. Extra Virgin Olive Oil
1 Green Bell Pepper
1 Red Bell Pepper
1 Yellow Bell Pepper
1 LARGE Onion
Fajita Seasoning (your preference on type)
Remove tails from shrimp, (if still frozen they break off easily!)
Chop onion and peppers to desired size/shape. I like peppers in strips and Onions in chunks.
Heat Olive oil to a medium-high heat. Add shrimp, onions, and peppers. Add Seasoning..(tip: if you get a seasoning packet, don't add the whole thing! WAY TOO MUCH SODIUM! I like to add a tiny bit while cooking. You can always add more after cooking if you like)
Cook until shrimp is tender. I like my veggies a little al dente.
(if water collects as it's cooking, pour it off)
You can also add: whole kernel corn or tomatoes if you like! Yummy with fat free sour cream, Fat free shredded cheese, Guacamole, Salsa, and Shredded Lettuce!
I also found some 89 calorie Fat Free tortillas at Wal-Mart. They are "La Banderita" soft taco shells. Warm them in the microwave per directions on the package!
Great low calorie dinner! LOVE IT!!
