Third shift meals

I have been having trouble losing weight since coming to third shift. I initially gained 10-15 pounds... My eating habits, sleep and exercise went down the drain. Now I work out 5-6 days a week doing jillian michaels high intensity workouts, or running 3-5 miles. On top of that and normal house duties I ride my horse, which is definitely a workout (no trail riding). I now have my sleep under control and sleep 8 or 9 until 4 or 5 (I work 12-8). But as hard as I workout, and for the most part as well as I eat, I can't lose weight. We might eat out once a week, I drink in moderation, and I can stay away from snack foods. I make everything myself and love
Fruits and veggies... But i am at a total loss for why I can't lose weight with all the effort i put in. I think it may have to do with the times I am eating and what I eat(maybe not enough ?) does anyone work third shift and have success with eating /weight loss?
When I wake up, I work out--eating and drinking gives me cramps or I just won't do it after.
Then I eat-- protein/fruit smoothie or eggs
Around 8 or 9 I eat dinner... Some type of meat dish with veggies usually. Or an omelet if I didn't already have eggs.
Nap until work, then a snack and some coffee. Snack may be a little cereal or just something very small to hold me over.
I try to eat between 5 and 6 again... Yogurt and granola, or pb and j or cereal and an apple and maybe a piece of cheese. Then I am good until bed. I don't drink soda and try to consume as much water as possible.
I'm a police officer so anything I bring I try to make easy to eat in case I don't get to get out of my car for lunch I can easily eat in the car without skipping meals and going hungry
Any help would be greatly appreciated, it's stressful working so hard with little results.

Night shift is difficult, I lost 50 pounds last year before coming onto night's but once I started working overnights my weight loss stalled. For me I'm starting to think its a lack of quality sleep and low energy levels on days I work. I've been trying to cut processed food and bring veggies to snack on all night.
