My same old banana bread recipe, now healthier! Making these would be way cheaper than buying a pack of 100 cal snacks at the store... and in most cases tastier. You could do Splenda if you're into that and cut it down even more. Nuts would be awesome in it, but I didn't have any.
Ingredients:
1/4c. egg beaters
3 ripe bananas (the riper the better!)
2 tbsp Country Crock margarine, melted
1/2c. brown sugar
1/2c. white sugar
1 1/2c. all-purpose flour
1tsp. baking soda
1tsp. salt
1/4c. no sugar added apple juice
sprinkle of cinnamon and nutmeg (to taste)
Mix all ingredients and divide into 8 large muffin cups or mini loaf pans. Bake at 325 for... well, I didn't time it... 20 minutes?
112 calories each - and you can see all the rest of the nutritional stats on it if you search the database for "Keri's Banana Bread."

All right, it's that time of night. Just give me 10 of them and I'll be happy:grumble:0
