Healthy Salad Bar Salads

So as a quick lunch at work I often stop at a grocery store and get a salad....well before I really started watching what I was eating I topped my salad with all the goodies, that probably weren't the best options. What are you favorite salad bar salad toppers?!

    Variety of fresh vegetables of choice (tomatoes, cucumbers, carrots), garbanzo beans, grilled chicken, and a low fat dressing :)

    I make my lunch salads at home and use whatever I have. Some toppings I like are: chopped roasted/grilled chicken, feta cheese, olives, toasted chopped almonds, fresh dill, toasted sesame seeds, chopped hard boiled egg, kidney beans (or another sort of bean), a chopped pickled bean or two.....(only one or two toppings; not all of them at once :smile: ). Tomorrow's salad has a few marinated artichoke heart pieces on it.
    The rest of the salad is lettuce, carrot, avocado, radishes, tomatoes, red pepper and a sliced mini cucumber.

    Whether I'm at a salad bar or not, I love lots of color, texture and flavors mixed together.

    1. Good greens, none of that iceberg crap. A spring mix with some spinach added is ideal.
    2. Onions, preferably red.
    3. Peppers, preferably multiple colors besides green.
    4. Pickles, preferable bread and butter plus a small assortment of non-cucumber pickles (I have squash pickles, Wickles okra and pickled watermelon rind right now.)
    5. A sprinkling of something crunchy: sunflower seeds, cashews, whatever.
    6. A sprinkling of protein, preferably salty: bacon, ham, chicken, egg, steak, whatever.
    7. A good dressing. Usually something light and vinegar-based, like Ken's Steakhouse sweet vidalia onion, but I'm not above something homemade or unusual like hot bacon, ginger, or roasted red pepper dressings.

    I don't bother with cheese in a salad. It just seems to add calories and fat, but there's too much going on to really taste it. I do like to sprinkle on herbs and spices, though. Add a bit of fresh cilantro or thyme or dried garlic along with fresh ground pepper.


    ETA: I do sometimes make exceptions for feta.
