My son's first birthday party is next week and I am looking for some yummy main dishes!! I have overdone pulled pork, italian beef, mostaccoli, and burgers/ hot dogs between all the parties I've thrown for my kids. I'm looking for something that will feed a good sized crowd and impress them!! Any ideas??

We usually do sloppy joes, or a platter with cold cuts, cheeses, and breads for guests to make their own sandwiches. Both aren't very involved, but they are easy.0

I found a great crockpot recipe on here the other day that i thought was great for groups. Its for tacos...easy warm up tortillas, dice up tomoatoes and lettuce and shred some cheese. people make their own. These were excellent. I even used the left overs for a sandwhich the next day on the Orowheat Whole Wheat Thin bread.
1.5 lbs boneless chicken breasts
1 bag of frozen corn
2 tbs chilip powder
3 tbs lime ( i will put more next time)
1 jar chunky salsa (got ours from a mexican restaurant, i am not a fan of jarred salsa)
so its not spicy for the kids, use a mild salsa or even a jar of mild salsa verde0
