I live alone and cook all the time. I either make enough for just one meal, or if it is something that tastes good leftover, I make enough for two meals. There is nothing I won't make, boiled dinner, beef roast with potatoes and carrots, lasagna, goulash, chicken and rice, stuffed peppers, chicken parmesan, etc.

I never make more than the one or two portions of the meal, so there is no way to overeat.
