Summer squashes (zucchini, yellow) or winter squashes (butternut, acorn, etc.?)
I like to use butternut squash and roasted red pepper to make a pasta sauce.0 -
Summer squash sliced brush with olive oil salt and pepper and brown on the grill. Be carful this recipe is highly addictive.
Winter squash (acorn) .....Squash Soup remove seeds roast squash in oven until fork tender. remove from skin place squash in a sauce pan add 1/2 tsp. cinnamon, 1/2 tsp. nutmeg, and 1/4 tsp. Cayenne Pepper and 1 cup milk. heat over low heat while mixing with an immersion blender. Serve hot.0 -
Zucchini Patties
ingredients-
1 1/2 lbs zucchini
1/2 tspn salt
1/2 medium garlic clove finely chopped
2 large eggs lightly beaten
1/3 cup grated parmesan cheese
2 tablesoons vegetable oil
1. wash zucchini and coarsely shred with cheese grater.
combine with salt and let sit for 15 mins in a bowl.
after 15 mins, firmly squeeze to release most of the liquid
drain on paper towels.
2. add garlic, eggs and parmesan cheese. mix well.
heat oil in non stick skillet over medium high heat.
mound heaping tablespoons of the zucchini mixture
into the skillet and flatten slightly. fill the skillet but dont
over crowd, leave room for flipping.
3. cook 6 to 8 minutes turning once until golden.
makes 21 patties

serve with sour cream on top, salsa or plain.
try also using romano cheese instead of parmesan, can also add parsley or a little finely diced onion and celery.0 -

Sounds yummy, will try! ...I've heard if you have to buy zucchini, then you have no friends. Lol I know this as my mom used to grow zucchini, and she had to give so much away, it produced so much! I moved to AZ and have to buy some zucchini for this recipe, I guess I have no friends At least, none who grow zucchini! (maybe it can't grow here?)0
