HELP WITH DINNER PARTY ASAP PLEASE

we have friends coming from out of state for supper....she too is counting calories....what can i make that will be healthy but that everyone will like....kids included.

maybe something with shrimp in it? Or shrimp cocktail for a low-cal appetizer? That is what I am doing tonight with our guests...
A nice salad with a whole mix of garden veggies. Or a veggie tray with the appetizers.
Grilled fish - mahi mahi or tuna would be light weight. Fish can be broiled too!
Maybe for dessert, chocolate dipped strawberries?0 -
Oven fried chicken breast. You can cut it in strips so it looks and tastes like chicken fingers for the kids. Use panko bread crumbs! Add a little parmesan with the bread crumbs so it gives it a bit of a cheesy taste. So good, my hubby loves it!0

Chicken fajitas with lots of onion, green, red, yellow bell peppers. Put them on whole grain tortilla shells with some 2% shredded cheese, and reduced fat sour cream. Then make a homemade guacamole on the side with some baked tortilla chips. I love that dinner and so do my kids and husband.

Mmm, fajitas sound good! If you want a no-carb spin on those, I highly suggest lettuce wraps (basically, use iceberg or butter lettuce leaves instead of tortillas to wrap around the chicken/peppers/onions). If there's lots of fresh fruit around your grocery store, I'd say a nice fruit cocktail would make a great dessert (and if you wanted you could serve it over some low-fat chocolate pudding, I just use Jell-O brand). I've used all of these, I'm making the chili glazed sweet potatoes from myrecipes.com for a dinner party tonight. I'd recommend some sort of broiled chicken breast (I love garlic and rosemary) sweet potatoes and either salad or 2 veggies maybe broccoli (with cheese for the kiddies) or green beans with garlic... It's pretty easy, tastes fancy and you're not going to rack up those calories. OO OO and do pumpkin smoothies for dessert!

This is a great idea! You can also try cornflakes in with the breadcrumbs for an extra crunch. If you either buy or make some light ranch dressing, it's perfect for dippin' too. :-) That'll especially be good for the kiddos.0 -
I take pork tenderloin and cook it in 2 cups of red wine with onion slices on top of meat. Then I remove the meat and pour fat free brown gravy mix into the red wine and thicken it on the stove top. Then add sauteed mushrooms. Serve with rice. YUMMY.0
