Good morning/afternoon/evening!
I have a really over-powering craving for fish. White fish, specifically. All well and good, but I am terrible at making fish! It's the kind of thing I order out because I always disappoint myself cooking it at home, don't know why, I'm a rather advanced cook otherwise.
So I invite you to give me your best white fish recipes or cooking suggestions! Happy to bake, coat, grill/broil, steam, happy to add flavours, spices, herbs, sides...
And GO!

Fish is awesome baked! I'll melt butter and add garlic and lime juice and crushed red pepper flakes and bake it. Or you can bake it plain and brush a nice honey/Dijon mustard over it during the last 5 minutes of baking.0

I'm like that with salmon. I will only eat it when we go out. My favorite way to cook white fish is in a foil pouch. I usually add a little lemon juice, olive oil, garlic, whatever seasonings I'm in the mood for, sometimes I'll add some veggies to the pouch like asparagus, Brussel sprouts, cherry tomatoes, carrots, etc. Just seal, place on cookie sheet and bake at 400 for about 15-20 minutes.0

White fish is my fave. Everything from talapia to Mahi Mahi.
My favorite way to make the more delicate kinds, like talapia and flounder, is spicy pan-fried. I specifically use Weber's Kickin' Chicken spice mix. Sprinkle it over fish filets which have been dried with paper towels. Pat it in to make sure it sticks. Sprinkle lightly with a mixture of flour and corn starch and pat it in also. You don't need to batter or fully bread it, just a light dusting. Then lay it in a hot pan with just a little oil in the bottom. Check it after a minute, when the spice/flour looks crusty, flip it. After a minute, check the thickest part of the biggest piece by poking it with a fork or spatula. When it's flaky, it's done.
For hardier fish like Mahi Mahi and cod, I prefer them marinated and grilled. Choose a marinade with a lot of citrus juice, and marinade for a couple of hours at least. To put it on the grill, get a grill pan made for fish, or a flat one with holes in it, or if you don't have a grill pan, poke holes in tin foil. You basically just want something which will allow you to pull the fish off without it sticking and tearing it all up.0 -
Here's one of our faves. Recipes says tilapia but you can reallu use any kind of white flaky fish.
Parm Crusted Tilapia
3/4 cup grated Parmesan cheese
2 teaspoons paprika
1 tablespoon chopped fresh parsley
salt and ground black pepper to taste
4 tilapia fillets
olive oil
Directions
Preheat oven to 400 degrees F. Line a baking sheet with aluminum foil.
Mix Parmesan cheese, paprika, and parsley in a shallow dish; season with salt and pepper.
Drizzle tilapia fillets with olive oil and dredge in the Parmesan cheese mixture. Place fillets onto the prepared baking sheet.
Bake in preheated oven until the fish flakes easily with a fork, 10 to 12 minutes.
I'm also crazy about salmon and pick up at the grocery store whenever its on sale! LOVE LOVE LOVE it!
I usually just salt and pepper it and sear it on all sides!0 -

I am REALLY funny with fish. I think I was spoilt as a child growing up in Aitutaki as everything was fresh. I pretty much only eat fish in the islands. Everywhere else I can smell it and that puts me off. It might be fresh for most but it isn't for me lol. What a snob.
Anyway, best fish = Mahi Mahi steaks with salt and pepper chucked on the BBQ and squeezed lemon over the top whilst cooking. OMG SO GOOD. So simple0 -
Saute your fish of choice until flaky. Season with plenty of chili and lime. Serve in fish tacos. Yum!0

Yes please. BBQ'ed with lime, garlic, pepper...put mine in a corn tortilla please. Serve it with a cold champagne beer, and we can be friends!0

I'm not the best with fish either. I tend to put lemon pepper on every fish I make! My favorite fish is the potato crusted cod they sell at Target in the frozen section. It's only 250 calories for one piece and it tastes really good!0
