Need some inspiration please!!!

So I am a full time college student, but I dont live on campus. as such I try to pack as much food as possible to avoide the calorie death traps my school has to offer.
breakfasts are almost always Greek yogurt and a piece of fruit, and I am very happy with this, no burnout. Great energy levels, lots of protein, not hungry till lunch.

what I AM burned out on is snacks and lunches.
often I pack baby carrots and apples or snap peas and grapes, a boiled egg, or a Think Thin bar, for snacks, which is fine, Im not terribly burned out on this. any other suggestions though?
I spend the last few weeks eating lots of wraps consisting of lavash bread, a little turkey and cheese, and a teeny bit of hummus with sprouts and lettuce. definite burnout here.

I have issues with portability. I love veggie soup that I make at home but I can not easily transport it. I was thinking maybe making a batch of quinoa or brown rice to mix with some beans and veggies maybe?

I would love any suggestions. I am a mostly-vegetarian leaning person (still trying to slowly get rid of chicken and fish...I eat these occasionally)

  • Have you tried the Vita-Top Muffins? 100 Calories. I eat one every morning for breakfast. Deep Chocolate and Banana-Nut are my favorites.

    My new found favorite:

    cook quinoa as usual, begin to scramble eggs/egg whites (don't add anything to eggs), when eggs are beginning to solidify add in the quinoa and mix together until the eggs are cooked (each kernel of quinoa will be coated), add salsa.

    Sooooo good! & can be eaten cold!

    Dried fruit and nuts are always great, and easy to pack.....
    Whole wheat crackers or pita bread with hummus.....
    Tuna and crackers.....
