Serving size I figured at a cup because it's pretty filling!

I also set it up as 10 servings and it's truly probably about 12 cus we had a lot left over and 6 people ate it and I know the girls had more than a single cup, but this gives us a good idea!

I boiled chicken breast then shredded it
I prepared the rice as stated on box, i used great value instant brown rice, i cooked it until it almost done, then added the two cans of soup, can of corn, and can of green beans, and shredded chicken. Put it in a 9x12 dish, crushed up the ritz crackers and sliced up the stick butter on top of it then sprinkled the ritz crackers on top - baked until it was bubbly then put on broil for just a few minutes to get the crackers to get crunchy!

    I love this dish! I use broccoli and cauliflower for the veggies. I think you could use any veggies you like. There is a low sodium Campbell's Cream of Mushroom Soup that I use to cut the sodium a bit. I also don't see a need for oil (margarine.) Save where you can, I always say!

    What temp did you bake it at? I want to try this some time this week.
  • Sounds yummy....I'm always on the lookout for something different. Keeps meals from becoming boring. I'll be trying it.
