Pear, Walnut, Bleu Cheese Salad
6 cups Romaine lettuce torn into pieces
2 red pears cored and diced
1/2 cup walnuts chopped
1/4 cup thin red onion slices
1 oz crumbled bleu cheese
Toss and serve with LaMadelien's Bleu Cheese Vinegeirette (100 calories per 2 tablespoons)

I love this salad! I used to have to wait for a faculty member to make it... now I do it myself! It's quick and easy and is taken from the Giant grocery store recipe list.
Grapefruit Walnut Romaine Salad
Makes: 4 Servings
Prep Time: 15 Minutes
Ingredients:
8 oz. unsweetened red grapefruit sections in juice
10 oz. romain lettuce
1/8 tsp. ground pepper
2 tsp. olive oil
1 tsp. honey
1 tbsp. chopped walnuts
Directions:
Reserve 2 teaspoons of grapefruit juice from grapefruit sections. Combine romaine and grapefruit sections in a bowl; toss gently. Combine reserved juice, olive oil, honey, pepper, and optional salt, in a small bowl and whisk. Add dressing to salad mixture and toss to coat. Sprinkle with walnuts.
