    Oh I just wanted to add that beef, pork, and lamb are good options in non-ground form since you don't have to cook them all the way through - lower internal temperature means less time to cook them. Plus they reheat in the microwave alright - if they were medium, they'll end up well after reheating in the microwave but they won't be over cooked.

    Oh and dare I say, you can use more than once crock pot at a time! ^o^

    Pork needs to be cooked all the way through unless parasites in the brain is your definition of fun. Anti-parasitic drugs aren't fun ever.

    I used several recipes from this site http://whoneedsacape.com/tag/40-meals-in-4-hours/ (and a couple of others similar to this) and made 20 freezer bags of meals for the crockpot over Christmas break this year. It was one of the best things I did to help us avoid eating out too much during the winter months, which for me are the busiest - 12-16 hour days on a regular basis. It was nice to come home to a ready-made meal.
  • Like someone else here mentioned, put chicken breasts in a crockpot with a jar of salsa (I use Publix medium salsa) and leave in till dinner time. It shreds really easy with a fork and is perfect for making tacos. Just get out some toppings like shredded cheese, tomatoes, chopped lettuce, sour cream or greek yogurt, etc. And you have an awesome, delicious, easy dinner! Kids will love it too of course.

    Another idea that I really** recommend is "Madras Lentils" by Tasty Bite. It's the most delicious combination of lentils and beans and spices that comes in a bag you put in boiling water for about 10 minutes. I pour it over cooked rice so make sure you steam some before which is also really fast. It might sound kind of weird but I swear its amazing and it also tastes sort of meaty from the protein even though there's no meat-so you won't miss that aspect of it. You can buy it at pretty much any grocery store for cheap but I buy mine in bulk at costco. It's such a great fast and healthy(!!!) meal.

    WOW, everyone thanks so much for all the ideas and website links! I usually use Sunday afternoon to prep my lunch food, I think I may be prepping some dinner stuff too while I'm at!
