I just bought my first package last night because I would like to try it...however, I do not know how to prepare it or even know what to do with it. Any suggestions/recipes or help would be appreciated.

    Quinoa Pizza Bites

    Ingredients:
    1 cup cooked quinoa
    ½ cup shredded fat free mozzarella cheese
    ½ cup chopped basil
    ½ cup chopped pepperoni
    1 clove of minced garlic
    1tsp dried oregano
    1 large egg
    ½ tsp salt (optional)

    Directions:
    Preheat your oven to 350 degrees
    Quinoa: Bring ¾ cup of water or low sodium broth to a rapid boil and stir in ¼ cup of dry, rinsed quinoa to the boiling water/broth. Once combined, drop the stove temperature to a low, cover, and simmer the quinoa for 15-20 minutes or until all the water has been absorbed. Fluff with fork and allow time to cool.
    Place your 1 cup of cooked quinoa in a bowl and add the egg, mozzarella cheese, minced garlic, oregano, salt (optional), pepperoni, and fresh basil to the quinoa and stir all of the ingredients together. Once mixed, take your mini muffin tin and fill the tins with the quinoa mixture packing the tins with your spoon. Bake for 15 minutes.
    Serve with organic marinara or pizza sauce for dipping and ENJOY your pizza bites!

    One of my favorites before I went vegan. Actually fairly simple, and absolutely delicious, especially if you are a pizza lover!

    My favorites is Mediterranean Quinoa. You can also do quinoa with olive oil, garlic, & sauteed veggies
