Chicken Marsala wine substitute?

Hello, I'm 19 and Chicken Marsala is my absolute favorite chicken dish. However being 19, I doubt I'll be able to purchase Marsala wine, and I heard cooking wine is not a good substitute as it is very salty. Any suggestions/ substitutes that would allow me to prepare my favorite dish?

This sounds interesting and it makes sense (IMHO) that a little grape juice and sherry vinegar would do the trick

While you should always cook with wine that's good enough to drink, I use Marsala cooking wine then reduce the salt while cooking. Tastes good to me! (I also don't track sodium though so ....)

I've used marsala cooking wine. My bottle says 2T. is 190mg sodium. I don't watch sodium but I think that's minimal.

You're right. What's labelled "cooking wine" or "cooking sherry" at the grocery is terrible. They take cheap wine and add enough salt in it to make it undrinkable and therefore something anyone can buy any day of the week.

I, too, love chicken Marsala and respect your desire to stay "legal." Slightly less legal would be to get enough for your recipe from someone knowing that you are not going to drink it and much of the alcohol will evaporate in the cooking.

Meanwhile, I've spent a lot of time living in places where Marsala was hard to come by and used other sherries. So, if no one has any Marsala you can get, try asking for a bit of sherry.

If you just can't get any of these, then do other chicken sauces that don't require the alcohol but taste very good. Herbs, lemon, butter, etc., all make great sauces. And if you google "non-alcohol chicken marsala" you'll find lots of suggestions for similar recipes without the wine.

Thank you all for your suggestions I really appreciate each and every one! I will try the cooking wines and if that doesn't work out I'll just have to find another chicken sauce.

My lame substitute for the wine is just brown gravy... SO not the same thing, but I don't drink alcohol and would feel weird buying it just for Chicken Marsala. :(

What I've used before is 3 parts apple juice and 1 part red wine vinegar, or 3 parts grape juice with 1 part regular vinegar/lemon juice. You want fruity taste and a bit of sour/fermented taste to it.

Just ask a friend! You don't have to be 21 to EAT chicken marsala.

You might have trouble even finding 'non-cooking' marsala wine. I can't, which is why I use the marsala cooking wine. I'm sure if I went to a wine mart but my local grocer with hundreds of wines doesn't carry a marsala made for drinking.
