ETA: I cook with a variety of oils, including butter...and use whatever is the most applicable to what I'm cooking. There is no magic to coconut oil and much of the touted health benefits are unfounded at worst and exaggerated at best.
It's tasty...I like making popcorn with it and I use it with my scrambled eggs every day because I like it better than butter. It is also largely made up of medium chain triglycerides so I would say in that RE it would be a better overall choice than butter nutritionally speaking, but again, the benefits are going to be fairly marginal...it's still fat.
Like i said, I cook with it regularly...just as I cook with olive oil regularly and avocado oil regularly. Coconut oil is also not a high heat application oil so be aware of that. Just don't go doing stupid **** like dumping Tbsps of the stuff into your coffee because you think it's magically going to melt fat away...it's not...it's just going to make your coffe 120 calories more than it was...and give it a coconutty flavor.0
