Mushroom and Lentil bake

Thought some of you may enjoy this recipe! Totally vegetarian (and vegan too, I think!)

1 tbsp olive oil
2 shallots, chopped
2 garlic cloves, crushed
500g mushrooms
2 tbsp paprika
75g green lentils
500ml vegetable stock
625g raw potatoes


1) Heat oven to gas mark 3. Gently cook the shallots and garlic in the oil in a large pan

2) Slice half the mushrooms and halve the remainder, add them all to the pan and cook for 5 minutes on a medium heat

3) Add the paprika, lentils and stock and bring to a simmer

4) Transfer the mushroom/lentil mix to a large oven proof dish. Finely slice the potatoes and neatly arrange on top of the mushrooms. Cover with tin foil and cook in the oven for 30 minutes

5) Remove the foil and cook for a further 20 minutes until the potatoes are golden.


This recipe serves 4. Per serving = 232 cal
