Hi everyone!
My husband and I just started low carb diets and he hates vegetables plain, which I love, so its hard for him to get full after a meal. Any recipes that are low carb and filling? He's 6'7 and 350lbs so he's a big and hungry boy!

Oh my gosh. Your hubby and mine are identical. 6'7" and 350! I tell ya what I do, that you may not want to do, but unfortunately I have started cooking 2 suppers. One that I eat (grilled chicken and veggies, etc) and one that he can/likes to eat.

What is your reason for going low carb? why not serve some potatoes along with dinner? Although is not as nutritious than others, starchy vegetables such as potatoes do have hearty,filling qualities that can help to rebuild energy. A medium sweet potato is very filling and contains more vitamins and flavor than the white varieties. There are tons of ways to prepare potatoes as well!0

Stews and soups are a big yes! you can also find low carb alternatives to regular foods such as tortillas and breads. those will help fill the void. Also, as such a big man, his calories per day will be much higher than yours and his servings larger.
with low carb you can also eat beans and nuts...great sourced of protien and fiber. both will help fill him up, just be mindful of serving sizes and calories, they add up fast!0 -
Does he like chicken?? If so, that's a great compromise. My boyfriend is 6'7" as well and eats about 10 meals a day. And I try to watch what I eat so we compromise on chicken a lot. I make an incredible white wine lemon herb chicken (marinade it in a couple cups of white wine-- sauv blanc works well, squeeze a couple of fresh lemons, finely chopped onions, a clove of garlic and fresh rosemary and thyme) We grill it and steam brocolli with it and I add all kinds of seasoning to the broccolli (garlic powder, pepper, salt) so my boyfriend actually enjoys it because it has a lot of flavor. I always make sure his chicken breast is extra large so it fills him up. :-)0

Per my hubby, he says Protein protein protein. Cut out any excess sugars, i.e. SODAS/SWEETTEAS, try more water, lots of it, guarantee cuttin out those empty calories in just drinks will help start things off. Sweet potatoes are great w/ a meal, healthier for you too, i make sweet mash potatoes and they are YUM! Maybe use some light ranch dressing to dip his carrots/celery in, or w/ veggies, try usin some soy sauce and makin a stir fry like squash/zuccini and just a splash of soy sauce. But he def requires more cals Im sure so def more proteins. (nuts,turkey,chicken breasts (boneless/skinless) i have alot of great recipes that are healthy that use chicken breasts cuz I eat it alot. slim jims,eggs, protein shakes. hope this helps.0

Men's Health Magazine has their "Belly Off Diet", which is strong on the protein and most of the veggie options are not plain veggies. They have sauces or are cooked with other things. The recipes, which you can get from their website, are delicious and filling. My boyfriend was following their eating plan and dropped weight fast, was never hungry and he loved almost all of the foods. The best part is that the recipes are super easy to make and I liked them, too!0

A lot of people are against stir-frying but I don't think it's a bad thing as long as you are using very little oil and keeping it olive oil. Or if you can manage it, no oil at all. I stir fry veggies constantly and add LOTS of spices. My constant uses are garlic, ginger, and rice vinegar and a little soy sauce. It completely revitalizes veggies.0

I roast or steam veggies with lots of garlic. You can even "sprinkle" a bit of parmeasean or peccorino romano on them - or a squeeze of lime (especially on roasted asparagus). I do acorn squash in a hot oven for 1/2 hr and then turn over and fill is diced apples, cinnamon, sage and a drizzle of sugar free maple syrup for another 1/2 hour. Soooo good. I also do pork chops seasoned and browned and then in the oven on top of the same apples (in a covered casserole).0

don't use oil, try the blue menu low sodium chicken broth...that's my latest discovery...as for veggies, I have a large man as well, and he doesn't eat the same way i do, but he loves his veggies steamed with Mrs. Dash (any flavour) or sprinkle some cheese on top (Is that still low carb?)0 -
First off, conragts on making the decision to live a healthier lifestyle.
Just wanted to share my personal experience with low carb diets. I had great success with one of the popular low carb diets about 5 years ago. In 6 months I went from 260+ to 180. Low carb works great however, I found myself at 246 a year ago. Since then I have found an exercise program and nutrition plan that have worked for me and I'm now back to 185. What I've learned is there is no magic ratio of carbs/protein/fat that will help you lose weight. It really is all about a caloric deficit. You burn more than you consume and you'll lose weight. That's really why that low carb diets work. It's not the carbs your cutting it is the calories.
I hate to point out the recent "Twinkie Diet", but the reason they guy lost weight is he reduced his calories and that diet was essentially all carbs.
With that being said I still watch my carb intake, but it isn't the quantity I am concerned with so much as the source. My carbs need to be nutrient dense for fuel.
So my real advice is you need to find an excerise program that you enjoy and can do long term. Without exercise your missing have the equation. And long term because honestly anyone can lose weight, the struggle is keeping it off. Both your nutrition and exercise programs need to something you can maintain going forward or you'll find yourself back in the same situation again. Trust me I know.
