Plant-based without much space!

Hey there everyone. I'm a 27 year old woman living in Germany. I am trying to get back into gymnast shape, but since moving here my diet has been mostly pasta and bread. I'm putting the pieces back in place to get the body I have always had and I'm limiting my spaetzle intake to once a week!
So, I'm vegetarian and try to eat mostly raw fruits and vegetables with one cooked high-carb meal per day. I live only with my husband and was wondering if anyone has any great advice for someone who is only cooking for one or two, (when cooking at all), but eats almost only fresh fruits and vegetables but has a tiny European-style flat.
Food storage solutions? I like variety and my diet is about abundance instead of restriction. Where do I put it all, and how do I keep it fresh?
