What is your favorite healthy meal?

I am eating only one meal a day. the last two days consisted of healthy wraps with avacodo, lettuce , tomato, sour cream, hot sauce, shredded chicken or veggie showarma meat . BUT its getting old and frankly im not that great at making food. so my HEALTH wrap looked more of like a disaster wrap..
I am about to go to the store so any ideas?

Black bean tacos on a whole wheat tortilla.
Serves: 4 (the numbers are the calories per person)
Add one to two teaspoon olive oil to a skillet over medium heat add a can of drained low sodium black beans and crush about a third of them stir them up and little pinch of cumin and about 1/4 to 1/2 tsp chili powder along with one or two cloves of crushed garlic cook until beans are heated through and the spices are fragrant. If it looks dry add a little bit of water 2 tbsp at a time. (138) (calories include the use of 2 tsp olive oil)
for serving
4 large whole wheat tortillas (170)
1 cup fresh tomato cup fresh tomato (5)
1 1/3 frozen corn cooked, I like to char mine a little in a skillet (60)
2 oz cheddar cheese (reduced fat if desired) (60) (full fat)
1/4 cup light sour cream (35)
Guacamole (1 1/2 small avocados or one large mixed with fresh garlic cloves to taste and 1/4 of a white onion) (95)
1/2 cup salsa (20)
2 cups shredded green leaf lettuce (2)

If it were me, and I only had one meal a day to get all my macros and micros, I'd make a big omelette with sharp cheddar cheese, maybe throw in some toast with jam, and then some fruit or veggies.
Another option I like is Greek yogurt with frozen berries and granola or other dry cereal.

My current fave is chicken chow mein slimming world style. Loads of bean sprouts, veggies, mushroom, chicken and noodles, with fry lite.0
