Mushrooms are my favorite vegetable!! Does any other mushroom lover out there have any good recipes that I could try out? It would be much appreciated!! :)

    I love stuffed portobello mushrooms with goat cheese and sundried tomatoes and fresh basil... or anything you want!

    I've made this a few times, its super delicious. Although I followed the comments and sauteed the mushrooms with garlic and onions first.

    Eta: Forgot to mention I use about 5-6 cups of mushrooms. Sauteing them first they tend to shrivel up.

    ooooooh this looks so good, thank you ! question, when recipes call for breadcrumbs, can I use panko instead?? Are they basically the same thing?

    Mushroom and brie soup. I'd have to hunt it down in one of my recipe books, but I'm sure you can find it online. Other than that, I just kind of throw shrooms into anything.

    Real simple...here's the recipe.

    Cheesy Beef and Mushroom Casserole

    Ingredients:

    2 lbs of lean ground beef (can also sub with ground pork, turkey, etc.)
    500 grams of macaroni pasta
    1 14.75 oz can creamed corn
    1 10.75 oz can cream of mushroom soup
    1 can sliced mushrooms (or you can you fresh mushrooms and slice them, about 1 cup)
    2 tsp salt
    2 tsp pepper
    2 cups of shredded Monterrey Jack cheese (feel free to use other types such as cheddar, pepper jack, etc.)

    1) Preheat oven to 350 degree F. Meanwhile boil macaroni pasta according to package directions. Drain water and set aside.
    2) Heat skillet on med-high and brown ground beef. Drain the fat then add back to skillet and season with pepper and salt.
    3) In a large bowl mix together the ground beef, cream corn, mushroom soup, mushrooms and 1/4 cup of the cheese. Then mix in the cooked macaroni.
    4) Place mixture into a casserole pan and top with the rest of the cheese. Cover with foil and place in the oven for approximately 45-50 minutes.

    a super simple and low fat recipe is sauteeing them in lemon or lime juice. I usually add zucchini in there too and it can be eaten as a side or thrown into some pasta (:

    Basically the same thing. You can use whatever crumbs you want. :smile: I used 4C seasoned bread crumbs and mixed 1tbsp of parmesan cheese in. Just make sure you follow the comments and use spices (garlic, onions, etc) it's kind of bland if you make it by recipe.
