vegetarian spaghetti with zucchini n pesto
1 gluten free box of spaghetti
5 med zucchini peeled and dice 1/4 pieces
2 tbs of pine nuts 1 garlic clove diced
10 basil leaves chopped and fresh parsley
5 mint leaves chopped
2 tbs of romano chesse grated
8 tbs of evoo divided
salt n black pepper to taste
bring large pot of water salted to a boil peel zucchini reserve centers process peel with pine nuts garlic herbs cheese salt and pepper in a blender till smooth drizzle in 6 tbs evoo to make a pesto blend well over med heat saute zucchini dice inner portion in a large skillet for 1 min cook pasta drain and mix with pesto and diced zucchini in large bowl before serving

This looks very good as well. I would never have thought to put mint in it. I grow all sorts of herbs and love making basil and garlic pesto. Always looking for new ways to use up zucchini
