Coconut Ice Cream Pie

This came from my fiance's mom. It can easily be substituted for a variety of other flavors, such as chocolate, banana, etc.
Coconut Cream Ice Cream Cake
Makes: 1 pie
Ingredients:
1 ½ stick of butter (or whatever substitue you like)
4 coconut cream sugar-free instant puddings
1 ½ c. skim milk
½ gallon low-fat vanilla ice cream, softened
80 crushed Ritz crackers
12 oz. diet cool whip
Directions:
Melt the butter in a 9x13 pan and pour the crackers on top of it. Combine the ice cream, instant pudding, and milk in a mixing bowl. Spread over the cracker crust. Freeze. Add the cool whip to the top as icing, spring a few crackers on top.
I haven't figured out the calories on this... but it's so sinful, you don't even need to worry about portion sizes.

Put it in as a recipe (but didn't save) and it's about 480 cal per serving based on 15 servings! I'm guessing a lot of that is in the crust mostly because of the butter but it does sound yummy!0

You use instant pudding and just dump in the powder. It's not made up with milk. I wonder if there is a way to lower the calorie content? Maybe make it without the crust? It's such a good recipe, I'd love to tweak it!
