The kids have gone to sleepaway camp, and the husband won't be home for dinner, so I get to cook for myself today for the first time in...EVER? It feels that way. So I have a chicken breast and want to make a delicious and healthy dinner for one. I'm hoping to get some suggestions and links for recipes I can try.
I'm not eating paleo or keto or low fat or anything. I'm up for any cuisine and most ingredients--the only things I really truly hate are sweet potatoes. And I'm stopping at the store on the way home so I can get any ingredients I might not already have.

what are your favourite foods? what do you rarely eat but really like?
How about the chicken cooked with a balsamic glaze, served with roasted veg, or a good tossed salad or steamed broccoli (depending on the weather where you are/preferences) and a baked potato followed by a delicious summery dessert of a meringue nest with fresh berries & a spoonful of reduced fat creme fraiche or fromage frais?0
