He has gone back to the native grasses in an effort to restore the grasslands. The buffalo have room to roam and graze naturally. Based on some of your posts, I'm sure you don't care about that aspect, but it's also very good meat.

Depends on what country you're in, I would assume. Smaller butchers often carry it. I'm in Western Canada, so we have a fair bit of it out here. Bison, moose, elk, deer, I grew up and went to school with kids whose family farmed wapiti. Your best bet, though, is still going to be smaller, independent butchers, or looking to native populations in some proximity that utilize it. Maybe try and figure out where Costco is sourcing theirs from?

We're lucky enough that several local grocery stores and farmers markets carry it here in northern Virginia. My son has a buffalo farm about 15 minutes from his house and buys freshly frozen bison regularly.

We can get ours at Kroger, though when we were living in NY we also got it at Wegmans.

I asked my friend from Birmingham what's the difference between and buffalo and bison - he said: you can't wash your hands in a buffalo!

Kroger sells it too, if there's one nearby you.
