Black Beans & Rice

This is a fave that I make quite often. Quick and easy.

1 Can black beans (undrained)
1 Can Rotel Tomatoes with green chilis
1/2 cup chopped onion
3 garlic cloves minced
1/2 t oregano
1 t cumin
Shake or two of black pepper
Shake or two of hot red pepper flakes (optional if you don't like any heat)
1 T chili powder (can modify this, I like chili powder)
1 T EVOO
Dash or two of red wine or red wine vinegar (I use the wine)

Saute onions/garlic in olive oil. Do not brown. Add all other ingredients and simmer on low for about 30 mins, stirring occasionally. Check seasoning. I don't usually add salt because the beans and tomatoes are salty enough for me. Serve over brown rice.
