stove top recipes
Our oven broke this week. Luckily, we don't really need it until Christmas. So now I am cooking on the stove top and/or crockpot. I have a few standards I go to for stove top cooking. What are your favorites? I usually do a bean and kale soup, turkey chili, beef stew (in the crock), healthy version of beef stroganoff with lots of mushrooms. I would love to expand my horizons.

We do so much in the oven, I can't imagine, but my stove top specialties include chicken curry, chilli, spaghetti bolognese, (yes, it can be good for you) turkey noodle soup, turkey/chicken stir fry, lean beef burritos, and chicken fajitas. I would love a healthy version of stroganoff. Haven't had it in so long!0

Spicy Mexican Skillet Chicken
Prep Time:25 min
Start to Finish:25 min
makes:4 servings
1 to 2 teaspoons chili powder
1/4 teaspoon salt
1/4 teaspoon pepper
4 boneless skinless chicken breasts (about 1 1/4 lb)
1 teaspoon canola or soybean oil
1 can (15 oz) black beans, drained, rinsed
1 cup frozen corn
1/3 cup Muir Glen® organic salsa (any variety)
Chopped fresh cilantro, if desired
1. Mix chili powder, salt and pepper. Sprinkle evenly over both sides of chicken.
2. Spray 10-inch skillet with cooking spray. Add oil; heat over medium heat. Cook chicken in oil 8 to 10 minutes, turning once, until juice is clear when center of thickest part is cut (170°F).
3. Stir in beans, corn and salsa. Heat to boiling; reduce heat. Cover; simmer 3 to 5 minutes or until vegetables are hot. Sprinkle with cilantro.

I also do meat loaf in the slow cooker--crumble up balls of aluminum foil or put a small rack on the bottom of it to keep the meat from sitting in all the fat.0 -
There are tons of options! You can roast a chicken in the crockpot and then do veggies on the stove. You can make soups in either the crockpot or on the stovetop.
