Hi all! I just made a new soup on the stove te other night and it was sooooo good! It's called "Unstuffed Pepper Soup." It only took 30 minutes from start to finish.

1 lb. lean ground beef
3 large green peppers-chopped
1 large onion-chopped
2 cans 14 1/2 oz. beef broth
2 cans 10 3/4 oz. tomato soup
1 can 28 oz. crushed tomatoes
1 can 4 oz. mushrooms
1 1/2 cups cooked rice

Brown beef, peppers, and onions until no longer pink-drain
Stir in broth, soup, tomatoes, mushrooms.
Bring to a boil. Reduce heat to simmer for at least 20 minutes.
Add rice and heat through.

This makes 10 servings, I served with herb cheddar biscuits and it was soooooo yummy!Hope you all enjoy!

This sounds so good! We love stuffed peppers and this seems to be a much quicker way to get the same flavor! (We also love soups!)

    Thanks for sharing.

    Calories please

I ran this through Calorie Count's recipe calculator and got this:

Nutrition Facts Serving Size 1.5 c. Amount Per Serving Calories 280
    Saturated Fat 1.4g
    Cholesterol 40mg

Total Carbohydrates 40.1g Dietary Fiber 4.7g Sugars 11.1g

Note--this does not include the mushrooms (I'd be the only one to eat them so I won't use them in a meal that's for everyone.)
