In the past two weeks I have been into eating canned tuna with sweetcorn. It's a great lunch option for me, it's easy and I love how it tastes. It's not many calories either, 120g of tuna + a few spoons of sweetcorn. Comes to less than 300 calories.
I decided to google the benefits of canned tuna, and it suggested that it's best to eat it every 2-3 days due to mercury in the fish. Now I am bummed that I have no easy and quick lunch option. Do you have any ideas?

I am using slices of ham or chicken. If you do the tuna with salad, I think these slices are a good option for you. Here there is also slices of turkey (similar to the ham and chicken). A boiled egg, also good. The problem with canned tuna and egg is the cholesterol. Be careful with that. I also used in the past to do boiled fish, with salt, pepper and oreganos, in the day before, adding a sauce of olive oil or yogurt.
Try to do a variety salad, so you get all the needed nutrients, or you need to take vitamin pills. Also canned food have more salt or sugar, so it is better having some fresh veggies.0 -

Dietary cholesterol really isn't something most people need to concern themselves with. I agree that lunch meat, chicken (shred it up and mix with some shredded veggies for a nice salad), and eggs are excellent options.0 -
If it's a brown bag lunch you are making, I like extra lean smoked turkey breast (the fat free has pretty well zero flavour). It makes a nice sandwich with some honey dijon mustard, lettuce and tomato or pickle slice. I also cook extra chicken breast for dinner and make chicken salad for the next days lunch.0

Canned salmon is also good. Just as easy as tuna and lower mercury concerns0

I agree with the others - lunch meat (turkey) and chicken!
To mix it up I will eat some extra lean ground beef, but only about 2 ounces (since it is not as healthy as chicken), and put it in a salad. Then I also add about 1/4 cup whole beans for a little more flavor and protein0 -
Get a crock-pot
Buy a 3lb or 5lb bag of BONELESS SKINLESS CHICKEN BREASTS
Buy 2 bottles of barbecue sauce (whatever flavor you like, IE; Honey Mustard, Hickory, Mesquite, etc.)
Dump chicken in crock pot (frozen) and the two bottles of sauce on top of it...... cover and cook for 9-10 hours on LOW
When done........ scoop out chicken, shred for sandwiches, or keep whole and put them into containers for lunch.
Very easy for lunch. I make this weekly on Sunday and eat it through out the week on wraps, salads, or just alone.0
