Fast, Healthy Dinner Recipes???

Hello! Like many of you I have very little time to prepare dinner in the evenings. Do any of you have quick dinner recipes? Something I could even prepare the night before and put in the refrigerator and then take out and bake once we get home??? I only have about 30 minutes (total) to get dinner ready. Any ideas?

We love to eat just about any meats... chicken, fish, lean red meats, pork tendorloins, etc. We also love vegetables, etc. Just about anything. :happy:

    stirfrys and great because they are quick and easy and you can pretty much use anything that you have on hand!

    On those weeks that I know I'm going to be short of time I grill chicken breast on Sunday and just slice them thin and refrigerate.

    Wash some green leaf lettuce and don't cut, leave them whole and wrap them in paper towels before putting them in plastic bag.

    Slice carrots, celery, cucumber or have some sprouts on hand.

    Fat free salad dressing of any kind.

    Here's the quick dinner:

    You now have the makings of lettuce wraps. You don't need to do anything else except take out of the frig and eat.
    Put a little dressing on a lettuce leaf, layer with a little chicken or other meats, pile on the veggies, wrap the lettuce around and eat. Very low fat, very low calories and extremely healthy.

    Great for those who are staying away from too much carbs in the evening.

    Do you have a crock pot?? :love:

    When I'm feeling ambitious (which isn't frequently enough :grumble: ) I'll try & make a few dishes on the weekend then freeze/serve during the week. :smile:

    Trader Joes has great pre-marinated filets of all sorts of meats.

    So here is what I do…
    Sunday I defrost the content of the meat (for this ill use the ahi tuna)

    I then divide the filets in 3oz cuts. I take a piece of aluminum foil and I wrap up the filets with my favorite veggies and spices. Then, I place in the oven for 15 minutes or so. I pull them out and let cool. Then I refridge all of them and eat them on a bed of spinach throughout the weeks. I open up the foil drop the contents onto a plate a few minutes in the microwave and tada!

    We have a lot of cod, wild sockeye salmon filets and chicken breast on hand from Costco. They're all individually sealed so all you have to do is put them in the fridge the night before and then bake them the next evening with some seasoning. Couple that with a vegetable like broccoli (I like them lightly steamed mixed with garlic and olive oil to soften them, but still nice and crunchy) or mixed frozen veggies and you're all set for a very healthy dinner. Sometimes I'll add a healthy starch like sweet potatos or brown rice (all cooked and prepared in advance over the weekend) when I'm in the mood, but it's usually just the meat and veggies for us and then some fruit for dessert.

    Of course, we can't always eat fish or chicken, so I also buy a large piece of beef round and 96% lean ground beef and put them into the dinner rotation as well. I cut them into individual sizes and put them into the freezer. Beef round can be very tough, but I think that's the price you pay for such a lean piece of beef. Plus, even with its chewy texture, it's still a welcome change from fish and chicken everyday...and it's not so bad with A-1 sauce. I usually pan sear the beef round (after seasoning it)...make sure you don't overcook it.

    Eating like this isn't exactly exciting, but it really helped my wife and I with our weight loss.

    Chicken Breast with Salsa - so simple! Just pour salsa on the chicken breasts and bake. I serve with Brown rice and add some salsa into the rice as well.

    Ground Turkey with Egg Noodles and Peas - brown ground turkey, add brown gravy (I use the powder kind) and frozen peas. Cook until peas are soft. Pour over No Yolk Wide (Dumpling) Egg Noodles.
    I add pepper to the brown gravy for taste.

    Zatarains Red Beans and Rice -add cooked chicken breast during the last 10 minutes of cooking.

    absolutely right!!! I love using edamame(shelled soybeans) and of course I use low sodium soy sauce and splenda and a lil hot sauce kinda a teriyaki and throw in any veggies you wanna use with it, and serve over brown rice tasty!!!!!

    Thanks so much, everyone! These all sound delicious! And I guess (from what I've heard) that the key is to do some preparation on Sunday, if possible. I think I have just gotten out of the habit (until recently) of preparing healthy meals. But while reading your posts, it's all coming back to me now! :wink:

    O' and yes I do have a crock pot. The problem is the only recipes I know for it aren't really what you'd call "healthy"! Any suggestions? :huh:

    One of my famly's favorite...


    Use a 9" x 13" flat cakepan dish.

    Lay boneless chicken breasts done in the pan
    Pour a jar of your favorite sauce (Ragu' mushroom is one of my favorite.)
    Sprinkle your favorite bag of mixed veggies over the top of the dish.

    Put it into the oven at 400 degree's for 55 minutes. (Oven's vary, so just check it when you pull it out to make sure the chicken is cooked fully.) Enjoy!

    I live by my crock pot and you can make healthy things.

    Chicken breast, diced tomatoes, onion, and garlic to taste- cooks all day and the chicken is super tender/ add a salad and you have a great healthy meal in no time.

    Turkey chili- brown up some lean ground turkey- throw in crock w/3 cans of beans, 2 cans of diced tomatoes, onion, garlic, a packet of mckormics chili seasoning, cook all day.

    Beef Stew- lean beef cubed, carrots, sweet potatoes, onion, celery, 1 cup of water, 1 packet of stew seasoning cook all day.

    Chicken & rice- chicken breast, brown rice, and 1 can of cambells reduced fat/light cream of mushroom soup, 1.5 cups of water, cook all day.

    YUM, YUM!!! I will def have to try those! I lose to use the crock pot but hadn't heard of too many healthy recipes! Those really help! Thanks!:bigsmile:
